Baked Oatmeal


3 cup rolled oats
1 1/4 cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
3 eggs
1/2 cup melted butter
2 teaspoons vanilla extract


Preheat oven to 350 degrees F.  In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.  Beat in milk, eggs, melted butter, and vanilla extract.  Spread into 9x13-inch baking dish.  Bake in a preheated oven for 40 minutes.


Great hot out of the oven with a little milk or cream poured on top.  For variation, add 1 cup of dried cranberries or raisins to the mixture before baking.
