Cheese and Hominy Scramble

Ingredients

  • 6 large eggs
  • 1 can hominy
  • 1 cup cheddar cheese, shredded
  • 3 tablespoons butter
  • 3 tablespoons cream cheese 
  • 1 tablespoon parsley
  • oil
  • salt


Instructions

In a saucepan, coat the bottom with oil, add 6 eggs and lightly mix, add hominy, cream cheese and 2 tablespoons butter. Stir over medium heat until eggs are set and no longer runny. Remove from heat and add cheddar cheese and remaining butter. Stir until cheese and butter are melted. Serve immediately.

An unusual cheesy twist on classic scrambled eggs.  Delicious and filling.
