Rhubarb Custard Cake


1 package (18-1/4 ounce) yellow cake mix
4 cups chopped fresh or frozen rhubarb
1 cup sugar
1 cup whipping cream
Whipped cream, optional


Heat the oven to 350 degrees.  Butter or grease a 13-inch by 9-inch baking dish.   Prepare the cake mix according to the directions, and pour into the baking dish.  Sprinkle with rhubarb and sugar.  Slowly pour cream over top.  Bake for40-45 minutes or until golden brown.  Cool for 15 minutes before serving.  Garnish with whipped cream if desired.


This rhubarb cake has an old-fashioned appeal and is easy to make.  It is delicious with homemade whipped cream!
