Oatmeal Sugar Cookies


Cookie Dough
1 cup shortening
1 cup granulated white sugar
1 cup brown sugar
2 eggs
1 1/2 cups flour
1 1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
3 cups quick oats


Preheat oven to 350 degrees F.  In a large bowl, cream shortening and the white and brown sugars together, then add eggs.  Combine dry ingredients with the creamed mixture.  Stir in vanilla and oatmeal.  Chill dough if necessary. Roll dough into 1 inch balls, dip into granulated sugar and drop onto greased cookie sheet, sugar-side up.  Bake at 350 degrees F. for 8-10 minutes.  Do not over bake.  Cookies will firm as they cool.  Yield: 5 dozen cookies.


This is a delicious twist to the traditional sugar cookie recipe.
