Uncle Clyde's Peanut Brittle
1 cup white sugar
1/2 cup light corn syrup
1 1/2 cups unsalted raw peanuts
1 teaspoon butter or margarine
1 teaspoon vanilla
1 teaspoon baking soda
Generously grease a baking sheet with butter.
Combine sugar and corn syrup in a 2-quart dish.
Place dish in microwave and cook on high for 4 minutes.
Stir in peanuts.
Cook on high for another 4 minutes.
Stir in vanilla and butter.
Cook on high for 2 1/2 minutes.
Add baking soda and stir until foamy.
Pour on to baking sheet and quickly spread with palm of hand or wooden
spoon.
Cool, then break into bite-size pieces and store in an airtight container
in a cool place.
This is the easiest peanut brittle recipe I have ever seen, and it
turns out right every time!. It was given to us by a family friend
and now we make it every Christmas. Try it with walnuts or pecans
instead of peanuts for variety.
