Rhubarb Cobbler


2-1/2 cups diced rhubarb
1-1/2 cups sugar
1/4 cup butter

1 cup flour
1/2 cup sugar
3/4 cup whole milk
1 tablespoon butter
2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1 egg


Heat the oven to 350 degrees.  Butter or grease a 9-inch square baking dish.   Cover the bottom of the baking dish with the rhubarb.   Sprinkle with 1-1/2 cups sugar and dot with 1/4 cup butter.  In a medium bowl, combine the flour, sugar, milk, butter, and baking powder, mixing well.  Spoon the mixture over the rhubarb, then bake for 30 minutes or until golden brown.


This is Todd's mother's original recipe for rhubarb cobbler.  Try serving it with vanilla ice cream!
