Grandma Ola's Tapioca Pudding


4 tablespoons granulated tapioca (minute)
1/3 cup sugar
1/8 teaspoon salt
3 cups milk
3 eggs, separated
1 teaspoon vanilla


Combine tapioca, sugar, salt, milk, and egg yolks.  In top of a double boiler, cook over hot water, stirring frequently until mixture thickens and tapioca is clear (10-12 minutes).  Beat egg whites until stiff.  Fold hot mixture slowly into egg whites.  Add vanilla and cool.


Todd remembers his great-grandmother Ola (Viola Gares) making this tapioca pudding when he was little, and it is still the best pudding he has ever tasted.
