Mexican Fiesta Casserole
1-½ pounds ground beef
1 small onion, chopped
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
1 package corn tortillas
1 can cream of mushroom soup
1 small can evaporated milk
1 small can chopped chilies
1 small can taco sauce
¾ pound cheddar cheese, grated
2 drops yellow food coloring
In a large skillet, cook ground beef & onion until brown. Season the meat mixture with salt, pepper & garlic powder (to taste).
Cut tortillas in 4 parts & line the bottom of a casserole dish. Mix together, soup, chilies, & taco sauce. Add yellow food coloring to the soup mixture and stir well. Place alternate layers of tortillas, meat, soup mixture & cheese in casserole dish until filled.
Bake for 30 minutes at 350 degrees. Yields 10 servings.
Serve with tortilla chips for a complete meal.
