Pizza Meat Loaf
2 eggs, slightly beaten
1 8-ounce can pizza sauce, divided
1 cup saltine cracker crumbs
1/2 cup grated Parmesan cheese
1/2 cup mozzarella cheese, divided
1/2 cup chopped onion
1 teaspoon seasoned salt
1 teaspoon dried oregano
1/4 teaspoon pepper
2 pounds ground beef
Additional pizza sauce, warmed, optional
In a bowl, combine the eggs, 3/4 cup of pizza sauce, cracker crumbs,
Parmesan cheese, 1/4 cup mozzarella cheese, onion, salt, oregano, and
pepper. Add ground beef and mix well. Pat into a
greased 8-inch square dish. Bake at 350 degrees for 50
minutes. Drain. Spread remaining pizza sauce over loaf and
bake 10 minutes more. Sprinkle with remaining mozzarella and return
to oven for 3-4 minutes or until the cheese melts. Serve with
additional pizza sauce, if desired. Yield: 8-10 servings.
