Spring Mix Apple Salad


4 tablespoons apple cider vinegar
4 tablespoons vegetable oil
1 teaspoon sugar
1/2 teaspoon salt
1 large unpeeled red apple, diced
1/2 red onion, diced
4 cups various lettuces (spinach, red romaine, green romaine, radicchio, arugula, red oak, red bibb, frisee, totsoi, beet tops, red mustard, Russian blue kale, etc.)
4 ounces goat cheese crumbles (with thyme, basil, and red sweet pepper)


In a medium bowl, combine apple cider vinegar, vegetable oil, sugar, and salt; mix well.  Add diced apples, diced onions, and raisins; toss lightly to coat.  Cover and let marinate for 10 minutes.  Just before serving, put mixed greens  in a large bowl, add apple mixture, and toss to coat.  Serve on individual salad plates, sprinkling each with goat cheese crumbles..


This salad is easy to make and has a unique and delicious taste.  Be sure to have the recipe handy when you serve it!
