Cheddar Pear Pie
2 16-ounce cans sliced pears
1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
pinch of ground cinnamon
1 unbaked deep-dish pastry shell (9 inches)
Topping:
1/2 cup cheddar cheese
1/2 cup all-purpose flour
1/4 cup butter, melted
1/4 cup sugar
1/4 teaspoon salt
In a bowl, combine pears, sugar, cornstarch, salt, and cinnamon. Mix well and
pour into pastry shell. Combine topping ingredients until crumbly. Sprinkle
over pie filling. Bake at 425 degrees for 30 minutes or until crust and cheese
topping is golden brown. Cool for 10 minutes. Serve warm.
The pears and cheese make a wonderful combination. Try using 5 large ripe pears,
thinly sliced, in place of the canned pears.
